The making of Cognac

The harvest
The harvest takes place at the end of the summer or at the beginning of the fall when the grapes are reaching their maturity.
The wine growing methods, the yield, the harvesting dates are all strictly regulated by official decrees.
 
The wine making
Once the winemaking process is over, the wine is kept in large vats until the distillation campaign that will be preformed between November and March of the following year.
 
The Distillation

The distillation process is done in two rounds and takes 24 hours. Only small copper pot stills of 25 HL are allowed .

It requires time and care from the master distiller who will then keep only the heart of the second distillation: the purest and the most balanced and aromatic part for his cognac.
