Cognac ageing

The Cellars
In our estate, can be found the Distillery with its 12 copper alembics. Overlooking the Distillery are our 5 aging cellars located next to the river Charente. This great location is providing exceptional humidity and aging conditions.
In the cellars more than 2000 barrels of the precious eaux-de-vie are resting until they have reached their ultimate aging potential.

The Oak barrel
Only oak wood is allowed for ageing cognac. Oak wood will give the young cognac supple tannins and will allow a slow and well balanced ageing process.
The traditional Cognac barrel has a capacity of 350 liters.

The Angel's share
Each year the evaporation (know in the Cognac Region as the Angels Share) will gently darken the walls and roofs of the ageing cellars.
